This thread is resolved. Here is a description of the problem and solution.

Problem: I cannot find header text in the string translation. Solution: checked/enable topbar_right from WPML >>String Translation >> Translate texts in admin screens.

Now you can translate it from String Translation. Relevant Documentation:

I have a html text into my header (it's the HTML2, "Livraison dans le monde entier") and I cannot find it in the string translation. I have scanned the theme, without success.

Hi Constantin,

Thank you for contacting WPML Support. Please make sure minimum requirements for WPML:
https://wpml.org/home/minimum-requirements/

Install and activate WPML String Translation:
https://wpml.org/download/wpml-string-translation/

- Then, go to WPML >> String translation >> Search for the string you want to translate >> Add translation >> Check "Translation is complete” >> Save.

If still issue persists, I would need to request temporary access (WP-Admin & FTP) to your site so I can see your setup – preferably to a test site where the problem has been replicated if possible.

Your next answer will be private which means only you and I have access to it.

✙ I would additionally need your permission to de-activate and re-activate Plugins and the Theme, and to change configurations on the site. This is also a reason the backup is really important.

I have fixed the issue by checked topbar_right from WPML >>String Translation >> Translate texts in admin screens as in attached screenshot.

Now you can translate it from String Translation as in attached screenshot.
