The domain I chose is irrelevant.

My question is where did the option to "Create translations manually" go?

With it gone, how do we do manual translations?

I could not find any information outlining this change, and how to work around it.

Thank you.

Hello,

Thank you for contacting WPML Support. In the latest versions of WPML there's a minor change on how to chose the translation workflow. Now in the WordPress Dashboard > WPML > Settings you are able to choose between the Advanced Translation Editor or the Standard Translation Editor, in order to use the WordPress default post/editor for your translations you need to choose it when creating the content in the original language, using the option for that in the language box, you can read all the details on how to use this feature at: https://wpml.org/documentation/translating-your-contents/using-different-translation-editors-for-different-pages/.

Please, let me know if it helps, have a nice day.
