Tell us what you are trying to do?
Can you setup WPML on a single site using subdomains or is a multi-site setup required.
While using the folder options works fine on a single setup and for SEO purposes we would prefer to use a subdomain.

If the above can be accomplished on a single site setup then how would you test it.
I am trying to test the subdomain setup on a staging environment. How would you go about setting this up in WP Engine on a staging environment?
You can only add domains on the production environment.
Any gotchas such using let's Encrypt in regards to Wildcard SSL requirements.

Future growth would include addition of the (UK/CAN/AUS) as well.

Is there any documentation that you are following?

1.- In this case the configuration should be the same. I recommend you to contact WPEngine support service and ask them what is the best way to achieve the subdomains configuration on their servers. The requirements are in the link you are following:

2.- Please increase the PHP Memory Limit. Minimum requirements are 128Mb:
You can add this to wp-config.php to increase WP memory:

/** Memory Limit */
define('WP_MEMORY_LIMIT', '128M');
define( 'WP_MAX_MEMORY_LIMIT', '128M' );
