This thread is resolved. Here is a description of the problem and solution.

Problem: I have pages that were previously translated into French, and showed French content, but now the French content is missing. From the page list, multiple pages have gone from having a pencil icon to having a plus sign, indicating there is no French content. Is there a way to see if those pages did in fact have French content before, and if so, restore it without reverting to a backup?

Solution: Go to Dashboard → Pages, and select the French pages (see the attached screenshot). This way, you can see if there's any French page available (and it was just disconnected from the English version) or if the French page is not available at all (in which case you'll need to use the backup).

Thank you for reaching out the WPML support!

The WPML doesn't store any data about the previous translations state. Only the info about having translation is available (you see a plus icon is there's no translation or a pencil icon if there's already a translation).

The only thing that you can try to do is go to Dashboard → Pages, and select the French pages (see the attached screenshot). This way, you can see if there's any French page available (and it was just disconnected from the English version) or if the French page is not available at all (in which case you'll need to use the backup).
