Thank you for contacting WPML Support. Although I didn't see any language switcher in order to provide you with a detailed answer I would recommend the following:

1 - In your WordPress Dashboard > WPML > Languages click to edit your current language switcher and change to a list of languages instead of a dropdown menu of languages. You can also choose to hide the language flag, language name, etc and show just the language code. See: https://wpml.org/documentation/getting-started-guide/language-setup/language-switcher-options/

2 - The separator '|' between languages can be achieved with a bit of custom css code, using the CSS 'content: '|' property (see hidden link).
