This thread is resolved. Here is a description of the problem and solution.

Problem:
The client reported that after a recent update, the product-category links were not translating to Dutch (NL) and German (DE), resulting in 'Not Found' errors across the site's top menu and internal links. Despite various troubleshooting steps, including verifying taxonomy slug translation, enabling base slug translations, and clearing caches, the issue persisted.
Solution:
We accessed the client's staging site and discovered that the product category slug for Dutch was incorrectly set to 'product-categoriex'. We advised the client to update the product category slug in WooCommerce -> WPML Multilingual & Multicurrency for WooCommerce -> Store URLs tab -> Product category base. After updating the translation of the product category slug and re-saving the permalinks, the issue was resolved. Additionally, we ran a troubleshooting step in the WPML -> Support -> 'troubleshooting' link to address a problem in the language table on the database.

I found how to show the product categories in the menu pages 🙂

Hi Carlos,

[1] Can confirm that it works again like the last 10 years : yes! Could you please explain your patch/fix in a detailed manner?

[2] Add menu items -> Categories -> add the ones you want.

Once, the patch/fix is documented, we can finally update the production site.

[3] noticed that caching doesn't work anymore. Click on 'MOUNTAIN' on cfg and www to see the difference.

I'm happy to hear that the issue was solved.

To resolve the problem, I had to run a troubleshooting step that only appears if there is a problem in the language table on the database, and it is the one I have highlighted in the attached screenshot.

Note: regarding the cache issue, I don't see it related to the translation of the content of the WPML plugin, but if you suspect it is indeed caused by the WPML plugin, I kindly ask you to open a new chat/ticket to solve it independently. This way, we will be following our support policy of resolving an issue per ticket.
