Tell us what you are trying to do? to set up another English language site for Republic of Ireland as we are selling to them in Euro. is this possible as we plan to use .ie. Do we need to distinguish this English language site(ie fields settings) from our current default English site which we are selling in £?
Is there any documentation that you are following? no

Is there a similar example that we can see?

Please note that I am not a SEO expert, but I can give you WPML related answers and some SEO guidelines we have in documentations.

As for your questions:

Yes, that is possible by setting Irish as a secondary language, being one of pre-configured languages (you can also add your own custom languages):

You can also set WPML to have different domains per language:

When you add new language, you can completely distinguish that site form the original. You can add new currencies, prices, etc. This can be achieved using WooCommerce Multilingual:
