I'm still waiting a confirmation from PDF Invoices about the issue, they are looking into it.
I'm still working some things out with PDF invoices authors. They have updated the plugin with some fixes.
Nevertheless, the email issues still occure. My client tested some of the orders through WP Mail Log (LIVE SITE) and spotted these issues:

As you can see, the issues are completely random and we can't get to the bottom of this, why the emails are sometimes changing. Do you have any suggestions regarding these? We're baffled right now, we thought the issue was fixed.
We have Litespeed cache server (and the plugin) for optimisation. Could you ask your developers can the cache somehow affect emails and mix the strings for different languages?
Yes, my client was testing this on Friday, so after. It applies to the emails only.
We have solved the issues with the PDF translations as the author has provided beta plugin version, which worked, so they will be releasing an update soon.
But as I've mentioned, the falty translations still exist in woocommerce emails. I've just mentioned the caching plugin, maybe you had issues with it - we didn't have issues either so it was just a guess.
It's the emais for "Completed Order" status. So the steps are the standard ones - customer creates an order, pays etc. Then, the admin sets the order status to "Completed" and the emails gets sent out to the customer.
So in short, it's the Completed Order email which has those wrong strings 🙂
