Die Symptome: My German site is displayed in the Google search results in English. Fragen: Do I need to make settings in the backend of WordPress or in the Google Merchant Center to fix the language display issue?

Almost all of your SEO settings must be done in Yoast SEO, so it shows the correct content. I recommend you refer to their documentation and support for more details. WPML SEO only allows Yoast and Google to recognize the language of the pages in your website. It's Google who decides what will be shown where. Besides that, WPML SEO allows the user to translate Meta Data and SEO attributes. That's it.
