Problem:
Issues synchronizing menus that have custom links, you're unable to have the same menu across languages.
Solution:
Visit WPML > Support and click on "troubleshooting".
You will find a button near the bottom that says "Check for string issues". Click to go to a page displaying strings with issues, including those used in menu synchronization. Delete them, particularly those related to menus and try synchronizing the menu again.

I see the problem and I have reported to our development so they can take a look and fix it for next release.
Meanwhile, I want to try to help you publish the site tomorrow by providing a workaround.
First it is important to know that only menus that have custom links need to be synchronized. As far as I can see, ony the "Hébergements Menu" has custom links.
So I followed these steps in your staging site:
1) Delete all menus that aren't french.
1) Visit WPML > WP Menu Sync and sync only "Hébergements Menu".
2) Manually update the translations of this menu only.
This way, you only have to manually adjust 4 menu items in 4 languages (total of 16 entries). Its not ideal, but at least you can get the site published without having to synchronize everything manually.
I did this for the spanish menu only. Can you take a look and see if the solution is satisfactory for the moment?

Just a short follow up about the problem you have sychronizing menus.
If you go to WPML > Support and click on "troubleshooting" you will find a button near the button that says "Check for string issues" (see screenshot).
This button takes you to a page showing strings with issues. Among these strings are the ones used in menu synchronization.
You have a total of 7,749 strings that have either no translations, or incorrectly assigned translations. Please delete them (at least the ones related to menus) and things should start working normally again. Make sure you have a backup before deleting, just to be on the safe side.
This was most probably caused by an old bug that has already been fixed but left traces behind. The cleanup will make sure your site runs smoothly in the future.
