This thread is resolved. Here is a description of the problem and solution.

Problem:
You are experiencing issues with ACF form field labels appearing in Italian instead of English, despite following the provided documentation link.
Solution:
It appears that the labels were not translated but were copied instead. We recommend setting the custom fields to

copy

,

copy once

, or

translate

to enable translation. You can find detailed guidance on this process in a previous support ticket discussed by our colleague Prosenjit. Additionally, you might find the Expert mode useful, which is explained here: https://wpml.org/documentation/related-projects/translate-sites-built-with-acf/expert-translation-option/
After configuring these settings, please use WPML > String Translation to manage the translations.

If this solution does not resolve your issue or seems outdated, we highly recommend checking related known issues at https://wpml.org/known-issues/, verifying the version of the permanent fix, and confirming that you have installed the latest versions of themes and plugins. If further assistance is needed, please open a new support ticket at WPML support forum.

Hi there.

It looks to me that those labels were not translated, but actually copied.

Please take a look over this existing ticket at what my colleague Prosenjit is explaining as I think it might be valuable for you (check both page 1 and page 2 of that ticket).

So that you can see that you can set the custom fields to "copy", "copy once" or even "translate", so that you can translate them.

Also, here is more info about the "Expert" mode that's being mentioned in that ticket:
https://wpml.org/documentation/related-projects/translate-sites-built-with-acf/expert-translation-option/

You might also want to look for those in WPML > String Translation afterward.

Please let me know how things go.

PS: Just a note that I won't work on the weekend - I will get back to work on Monday (I'm mentioning this in case a reply comes this weekend).
