As WooCommerce Multilingual consideres that your e-shop is unique. This means that products should have the same attributes in both languages. If you want to add new attributes, you need to do it in your original product. Once you do it, those modifications would be added to products in other languages and then you will be able to translate them. https://wpml.org/documentation/related-projects/woocommerce-multilingual/ Let us know if it helps.
