This thread is resolved. Here is a description of the problem and solution.

Problem:
I am having an issue with product categories not displaying correctly in the translated version of my WooCommerce store.

Solution:

Go to WooCommerce->WooCommerce Multilingual->Settings->Troubleshooting-> Select " Sync products categories (display type, thumbnail):" and click on Start.
Go to Products->Categories-> switch to Spanish and locate the category. Check if products are assigned to it (look under count).
If the issue persists after these steps, try the following:

Go to WooCommerce > Status > Tools > Term counts: Click on Recount terms (do it for both languages).
Go to WPML > Support > Troubleshooting > Click on: Synchronize posts taxonomies (for Products and Variations).

When I review this product which is in the right category(you can see the category listed)

If I switch to the translated version of it I can see that it's not placed in the correct category.

Please try this and let me know your results:

1. Go to WooCommerce->WooCommerce Multilingual->Settings->Troubleshooting-> Select " Sync products categories (display type, thumbnail):" and click on Start

Do they show ok now?

2. Go to Products->Categories-> switch to Spanish and locate the category --> do you see products assigned to it? (look under count)

UPDATE - FIXED ISSUE

I did a bit of searching and I found a similar case that was solved.
Here is what I did:
Go to WooCommerce > Status > Tools > Term counts: Click on Recount terms (do it for both languages)

Now my problem is fixed!
