For WPML's minimum requirements, please see https://wpml.org/home/minimum-requirements/, which look fine as per your debug information. Except that REST API looks disabled. Sometimes the message on WPML -> Support saying that the REST API is disabled is just a false positive. Please follow the hidden link">tutorial described on this link and check if it is really inactive on your website.
You may also need to whitelist the following domains:
- wpml.org
- cdn.wpml.org
- api.wpml.org
- api.toolset.com
- cloudfront.net
However, besides the above mentioned, as per your screenshots in first message, looks like the text belongs to email content. Can you please explain which plugin is responsible for these emails? And can you try the following?
1) Take a full backup of your site and database before proceeding.
2) Deactivate all plugins except WPML, String translation and plugin relevant to that content only.
3) Switch to a standard theme like 2024.
4) Update the translation again and check for the issue if it still happens?
5) Then start activating plugins one by one while keep checking for the issue. This way you 'll be able to pinpoint a conflict when & where it starts creating the problem.
6) If after activating all plugins you see that it still works fine, then switch to your theme and see if that's causing it.

After checking, I found that the REST API was disabled.
However, I have never enabled or disabled it.
The only thing I can think of is that I installed the HTTP Auth plugin for Basic Authentication.
I tried disabling it, but the REST API remains disabled...
Are there any other items I should check?
