This thread is resolved. Here is a description of the problem and solution.

Problem:
The client is trying to translate the header menu and link the categories to the translated language pages in French. They are unsure if they need to include a string of letters and the '&' sign, which appears when translating accented French characters, in the string translation box for the header menu.
Solution:
We updated the slug translation in the WPML-> Settings-> Taxonomy Translation section from "catégories-produits" to "categorie-produit". We recommend the client to edit the translated menu, add the translated URLs, save the translated menu, and clear the site's cache to see the changes on the front end. For further assistance, please check the related known issues at https://wpml.org/known-issues/, verify the version of the permanent fix, and confirm that you have installed the latest versions of themes and plugins. If the problem persists or the solution provided here is not applicable, we highly recommend opening a new support ticket at WPML support forum.

Back Again. I cleared the wordpress cache and the menu came back. But the absolute header English strings are still in French.....(screenshot)

I went and changed the text from French (wrong) to English in the Flatsome theme - Theme Options - Header HTML text. I saved it. Went to look at the site. As as you can see from the screenshot, the text reverted to French, in the header editor boxes!

Hi Bonnie,

1) If the header menu is fixed after clearing the WordPress cache, it could be a caching issue.

If it's not a caching issue, I don't think it's related to the translation.

2) Please keep the strings in Flatsome settings in French and don't change them to English.

Kindly translate them in String Translation from French to English and keep an eye on the strings to check if they will change again.

Everything seems to be okay after a day, which is great! Before I end this discussion, just so I know, if something changes during a WordPress or wpml update, could you explain to me what you think is going on that I need to put French text into the absolute-header html boxes instead of English and then in the strings translate from French to English?

It's great to hear that everything works correctly now. I'm not sure why the string needs to be added in French, but it could be a corrupted record in the database.
