I tried switching temporarily to the classic editor, then switching back to the Advanced Translation Editor, and cleared the cache. This seems to have resolved the issue. It seems something was stuck in the AI Translation configuration in the set up process that was preventing us from selecting a translation engine. Once that cleared, the mapping fields showed up under WPML -> Languages -> Edit Languages.
