I am trying to translate the languages independently, but it seems like there are still some sort of connection even through we have made sure that the "translate independently" button was clicked, and some times it works fine.
But sometimes when we update the English version, either the German or French version is getting completely or partly overwritten.

The first text on the page is German, but the rest is English. And I can fix it bye editing the page, and pasting the German text again, but it happens sporadically through the site, so we never know when the problem will reappear.
Do you have a fix for this?

It could be there is an issue in DB, so it still stays as a duplicate.
Sometimes, a post can be displayed as a duplicate, even if we set it as “translate independently”. It happens because something is wrong in the database when a third-party post has the “_icl_lang_duplicate_of” key with the wrong ID.
Please make a backup before proceeding and try next:
To fix this, we just need to edit the database and remove the entry for your POST (POST ID) in the wp_postmeta table with the key “_icl_lang_duplicate_of”.

Should it do something with the translations, should it be german again? or do I still need to translate it again? and now I just know that it won't happen in the future?
The removal of the "_icl_lang_duplicate_of" post meta should not cause translation issues if the post was translated independently but was showing as a duplicate.
However, to prevent any issues I recommend you check the page manually and verify it is working well and is attached to the main post properly. Also, try the following fix/clear options at WPML -> Support -> Troubleshooting ( link ) after a complete backup of the site:
- Clear the cache in WPML
- Remove ghost entries from the translation tables
- Fix element_type collation
- Fix WPML tables collation
- Assign translation status to duplicated content
- Set language information
- Fix post type assignment for translations
Regarding the prevention of the issue, the best way to prevent such issues is to make sure your site is using the latest version of plugins, theme, and WP including the WPML version, and to make sure your server resources are good enough to support the site.
However, sometimes there could be some bugs/issues causing such issues in that case we will need to test the issue further and find the exact steps to replicate the issue to find a solution. I suggest you to keep an eye on the site and take a note of the actions, updates or changes on the site that could have caused the issue and contact us again for further troubleshooting.

It's German pages, but they have English text in them, and it's still there. So I guess I still need to go in and replace the text on the pages that was affected by this?
To troubleshoot the issue, I would need to take a closer look at your site. So would you please mind sharing temporary access (WP-Admin and FTP) to your site? Preferably to a test site where the problem has been replicated.
