Tell us what you are trying to do?
We already have one custom switcher, which we add to the desktop header (not in the nav menu) using a shortcode. We want to create a separate custom floating switcher with unique styling for tablet/mobile view.
Is there any documentation that you are following?

Is there a similar example that we can see?

Actually, there is only one global setting for the custom language switcher: https://wpml.org/documentation/getting-started-guide/language-setup/custom-language-switcher/

If you need a different layout for two custom language switchers, then you need to try to adapt the shortcode: https://wpml.org/documentation/support/wpml-coding-api/shortcodes/#wpml_language_switcher

But please bear in mind that you can not change between the 'Dropdown' or 'List' styles with this shortcode, as this is a global setting.

Furthermore, to achieve what you are expecting, it would be necessary to do some sort of code customization, and unfortunately it is not covered by our support policy: https://wpml.org/purchase/support-policy/
