This thread is resolved. Here is a description of the problem and solution.

Problem:
If you're using Checkout Field Editor for WooCommerce and can't find where to translate the field labels, even though you have already marked the fields as translatable.
Solution:
We found the strings in the text domain

woo-checkout-field-editor-pro

. To locate them, use the filter at the top of the string translation table. For example, we tested with strings like 'First Name', 'Name', and 'Telephone', changed the registered language to French, and added the translations. These translations should now be visible on the frontend.

I was able to locate the strings in the text domain woo-checkout-field-editor-pro. You can use the filter at the top of the string translation table to find them. I tested First Name, Name and Telephone and changed the registered language to French and then added the translations, and now I can see them on the frontend.

Lauren, I went back to my production site hidden link and tried to retrace your steps but I could not ! I thought I was going crazy… but then I thought of re-saving the fields. That's it ! The fields were added before WPML installation.

As proof, screenshots below. Before : only Name and First Name are visible and there are 126 strings in the domain. After : I edited the Téléphone field and saved it without changes, and now there are 127 strings in the domain.

I hope this will help future users, and I will contact ThemeHigh to let them know to update their Help Center.
