We had automatic translation enabled and it was working properly., but I did not trigger the translation of any single page, what I see happened, is that I just saved 2 items (with a lot of text) in the library AND somehow it automatically translated it in all languages without asking me anything (nether I got any warning nor is the page, where I saved these documents is available in any other language than English (default language)) --> Translating these items are completely useless as the page, where I saved them, is not available in any other language than english.

According to your screenshots, I see 2 posts are Divi Layout post type, not the regular Page of WordPress. By default, this post type is translated automatically if you enable the mode Translate Everything Automatically.
If you created the layout before, when enabling the mode, there is a box that shows you what will be translated automatically. So I think the automatic translation is working as it is.
