The issue is with the YITH WooCommerce Color, Image & Label Variation Swatches Premium plugin. In this visual builder section (see attached), for example, when we click "Save Changes," the color options appear, but they disappear in other languages.
Actually, if we go to edit the DIVI visual builder (on the product page in English), and click update on the WooCommerce add to cart section, the color variations appear. However, in the US/French language, they do not appear. Similarly, if we update in the US/French language, the colors on the English page disappear.
2 issues within the product pages:
Specifically within the EN product category pages, the filter "Color" is missing "Corten", and i believe this to be a missed detail from the previous delivery since the US product category pages, the filter "Color" has "Corten" included within it.
Another missing detail is within the single product pages where following are the pages missing the color selector field:

Regarding "YITH WooCommerce Color, Image & Label Variation Swatches Premium" plugin, this plugin isn't on our compatibility list (https://wpml.org/plugin/).
I also searched our forums for a relevant solution/report about this plugin but unfortunately haven't found one. However, I found one related to another plugin but perhaps with the similar functionality, at https://wpml.org/forums/topic/variation-swatches-for-the-second-language-is-blank/ (look for the big yellow box in the beginning for the solution).
Can you check this and see if it helps with your said plugin? The custom fields storing the info may not be the same but you can find the one(s) relating to this plugin.
