I wold like to convert a web site to use wpml from polylang.
My plan: run a migration plugin and then change some php code to wpml related one so website can work with wpml instead of polylang.
Did not tried yet because need to know:
1. Is there some plugin or some helpers where i can hook the standard polylang functions to translate the website and woocommerce pages?
2. Shold i rewrite every theme files/templates and php code before i start migration? Or there some temporary plugin to prevent the wpml/polylang conflicts?

From what you mention here i suspect that the best approach you can use is to create a staging site, create a snapshot of your site BEFORE doing the migration and then start migrating, possibly with all the plugins disabled and using a standard theme.
Then you can enable the error log and start enabling the plugins or themes that have the hooks and see if you get errors or warnings.
