I sent a test email to see the email a translator would receive. Is there a way I can edit the email they receive, so that they receive only the actual translation assignment and not the link to other pages that were not assigned?

You can control what notifications are being sent out from WPML->Settings->Translation Notifications tab
but you won't be able to edit the actual message.
The additional jobs they see at the bottom of the message are not assigned to anybody, you could potentially assign them to you which would remove them from the email.
