The slugs for the other language (FR) are different than the Default language in the woocommerce products. I can't get the french version to work correctly. The page links seem to work but not the product links

That's the URL setting. You can change that in WPML > Languages > Language URL format. Change it to "Different languages in directories ". That will reach your desired result.
I would like to look at this directly on your site. For this I would need temporary access (WP-Admin and FTP) to your site, preferably to a test/staging site where the problem has been replicated if possible.

I may need to replicate your website locally. To do this, I need to temporarily install a plugin called "Duplicator" or "All in One WP Migration" on your website. Thank you for sharing. I was able to fix it for the home page, by clicking the pencil icon to edit its FR translation and re-saving it. If you have this issue on another pages, please try the same solution.
