I actually did not do anything too technical.

Here are my steps:

1. Verify that WC and WPML are at their latest versions (which you have done already)

2. Go to https://wpml.org/account/downloads/ and manually download the WPML String Translation plugin.

Deactivate the old plugin and remove it, then upload the freshly downloaded WPML ST plugin and manually activate it. (The latest version has not yet been fully pushed to all sites but you can download it this way and it includes a fix for these issues)

3. Edit your WordPress Profile -> Make sure there is an email attached to it, if not, add one and save, then change the Language in the profile to "German".

4. Go to WPML->Support->Troubleshooting-> Cleanup and optimize string tables

5. In the same page run the option to Scan the MO files (button right underneath)

6. Go to WPML->Theme and Plugins localization, select the WoOCommerce plugin, and then scan it again.

These steps should resolve the issue you are experiencing on the live site as well.
