So far, when I created a site, I did it on the default language, then translated the content to the secondary language. Now I have a client, I created every content in English, but now they want English to be the secondary language. How should I do this?

In this case the best way is to first make sure all contents are translated to the Secondary language first. Then change the primary language of the site from WPML → Languages → Site Languages and click on “Change default language”, select the new primary language and Save.
However please note once the primary language is changed you will need to edit the translation and primary content manually directly from the page editor. Or if you try to edit the translation through the WPML translation editor you will need to re-translate everything from the new primary language to English. So please keep that in mind and make sure all contents are fully added and translated before changing primary language.
It is better to create content in the primary language then translate them to the secondary language. But if required you can create content in one language translate it and change primary language latter.
if you originally create layouts in the English then you edit them in English even after changing primary language. Or if you translate the Layout you need to fix both English and Other layout manually to change something.
The WPML translation editor will still work but it wont remember/does not know your new primary language to English translation so if you try to use ATE then you will need to do the translation again from New Primary language to English.
