I am trying to:

The footer is displayed correctly in German. Unfortunately not in the translation. Only the "Search" field is translated, the rest is not

Hi Thomas,
Thanks for contacting WPML support.

Please go into WPML > String Translation and use the search field to look for the strings then add the translation.

Hi,

the default language of the website is German. Why
Is English the default in the string translation?
The footer is output in German in the frontend.

Hi,

When the original strings are added in a language other than English, you might see incorrect source language on String Translation.

You can fix this easily by changing the source language of the strings. Please follow this guide: https://wpml.org/documentation/getting-started-guide/string-translation/how-to-change-the-source-language-of-strings/

Regarding the other question about translating the footer automatically, it's expected that the footer strings won't be translated automatically if you're using the "Translate Everything Automatically" mode.

This mode translates the following types of content:

- Posts
- Pages
- Taxonomy terms assigned to any posts or pages
- WooCommerce Products
- Some content from popular plugins

But it doesn’t pick up strings, so the footer widgets won't be translated automatically.

If you use the "Translate Everything Automatically" mode, you can send them for automatic translation as described here: https://wpml.org/documentation/automatic-translation/automatically-translate-strings-with-wpml/#translate-everything-automatically
