I am trying to translate the default meta title and description for each of my post types at Yoast SEO > Settings > Content Types. Usually, the way I do this with other site settings is to create the main language version, then use the admin bar language switcher to switch to a new language and edit the settings in the language, but this doesn't seem to work, regardless of which language I switch to it always overwrites the value for all languages. Am I doing this wrong, or is this a bug?

You should translate those texts in "WPML > String Translation". They are registered under the domain "admin_texts_wpseo_titles"
