I checked in your site and see that the "Additional Fields" are registered as a custom field which is currently set as Not translatable (see attached).
So you need to set "inspiry_property_features" as Translate, Copy or Copy once based on your needs in WPML -> Settings -> Custom Fields Translation.

So I am not sure that I chose the correct option but I put "translate" and now I feel that I need to translate this section in EVERY property.
How can we make it so these fields are translated once as "taxonomies" and then just selected in the property page?

But since these are coming via the custom fields, as I understood, that's the way to translate these. However, you can try this workaround after setting that field to translatable:
0) You'll also need to set "inspiry_project_features" and "inspiry_furniture_&_appliances" to translatable for Project Features and Furniture & Appliances.
1) Create a test property.
2) Select all these checkboxes.
3) Save.
4) Translate this property.
5) In ATE, translate all of these options.
6) Save and complete the translation.
And if these are translated once, these should appear correctly in other properties on frontend too. And if these don't, I am afraid you 'll have to update each property accordingly. Because custom fields save values per post separately.

So I followed all your instructions and translated a property with all the additional custom fields but it didn't update the others so we still don't have these in the french version...
The property that I created is called "WPML do not delete".

My apologies, these must have been added after I switched them to translatable.
Now we finished the full page at 100% and it does show in the french side.
But all the others are still not showing, maybe we need to push for a resync somewhere?

I am afraid there's no sync for custom field values (unlike taxonomies) because custom fields are attached per post, so are their values. You'll have to update the posts manually.
Make sure to make a little change in the post in default language to trigger a change event and then update translations.
