We have a copy of our site that we use as a test site prior to making any changes on the live one, can this plugin be installed on both or do we have to purchase two copies?
1) Different domains ( .it .de .es etc. )
2) Subfolders ( http://www.website.com/it /de /es etc.)

If I use the first option, for example I translate my website in 5 different languages and each language is on a different domain, do I have to create 5 different websites and then WMPL will connect the content among all the domains or WPML itself will create a copy of my main website and host it on my different domains?
Also, all the domains must be hosted in the same server? I think I encountered this problem years ago while using siteground shared hosting, that I still use.
Options 1 and 3 are the same as far as WPML is concerned.
What you need is that all 5 domains point to one single WordPress install and WPML takes care of the rest.
The way to do this depends on your hosting (ie: in Apache this is done with ServerAlias directive).

Yes, each language (or region) has a specific menu displayed.
Each language (or region) also has its own set of blog posts.
But keep in mind that visitors can switch language to see the menu and blog posts of another region with the language switcher.

Chargify only allows for one currency per site, and if you need to sell in multiple currencies, you will need to set up a separate site for each currency. However, they allow for many separate sites within my single Chargify account.
