I’m considering setting up a bilingual English/Japanese online store with WordPress.com/WooCommerce, single site and store with products translated, but with separate blog content for the English and Japanese languages. So that English blog posts (and corresponding menu titles) that are not translated to Japanese, are not visible on the Japanese version of the page, and vice versa.

Essentially, I don’t want untranslated content to appear at all in secondary language pages. And I want some blog content published in the translation language only too.
I’d basically like two separate blogs: one for English, one for Japanese (secondary language). I don’t want the English blog to be visible to Japanese language viewers. Same for the Japanese blog – I don’t want it visible to English language viewers.
Yes, keep them translatable and just create individual posts in each language, without connection.
Make sure to turn off translate everything for posts if you have it turned on globally.
If you buy WPML, I suggest you ask for help in the forum and our tech team will give you more accurate instructions of how to do this.

Hello, thinking about purchasing, but trying to find documentation on how the pages are stored/structured if I plan to use subdomain setup such as es.example.com/samplepage
In this scenario, do WPML create a SEPARATE fully-translated page that is stored on my host as es.example.com/samplepage and does it then therefore have a DIFFERENT wordpress page id than the original http://www.example.com/samplepage? (If so, a separate page id is problematic for me as I use a lot of hard-coded page ids in my child theme functions.php file for various functionality purposes that would not work with the translated the version)
Hope you can clarify this and hopefully provide some links to more technical details of how exactly WPML is structred in this regard.

Yes, WPML creates a new page with a different id in your database. https://wpml.org/documentation/support/wpml-tables/
Most of the hard-coded pages ids should work without any issues as WPML tries to search for translated ids if possible & depending how it’s added.
We have also a hook which can be used with hard-coded pages ids to return ids in current language https://wpml.org/wpml-hook/wpml_object_id/

Does this mean that your plugin does not work with Elementor and this theme?
